Wilding - Keeved Claret 2023 (for Boxing Day)
Sparkling Sweet Fine Perry
Claret is a very rare, late season pear; tiny, russeted and with full tannins, they seem prone to a spontaneous keeve. After keeping in stainless steel this was transferred to two old oak casks for fermentation, followed by brief maturation in steel and bottling.
Rich and lusciously sweet this has aromas of dried fruit and poached pear, with pear skin tannins on the tongue and brown sugar. Pairs well with desserts, especially almond and pear puddings, trifle, Stilton or washed rind cheese. Alc. 4.4%
